Enchilada Pierogi

Enchilada Pierogi Bake

Yield: 2-3 Servings

Ingredients:

1 Package (6 pierogi) of Yeah! Pierogi Poblano Black Bean with Tomato Dough

1-1/2 Cup (10 oz) Enchilada Sauce

1/2 cup Vegan Shredded Cheese (optional)

Salt and Pepper to taste

Toppings:

Guacamole

Salsa

Fresh Cilantro

Hot or Mild Sauce

Directions:

  1. Defrost pierogi overnight in the fridge.

  2. Preheat oven to 350°F. Coat a 13x9-inch baking dish with oil.

  3. Add pierogi to the baking dish, Pour enchilada sauce over the pierogi then top with shredded cheese.

  4. Bake for about 20-25 minutes, till top is browned.
