Yeah! Pierogi .... how we started .....
Hi All! We truly appreciate the warm welcome we have received from the Vegan Community. We loved how everyone who came to visit us was as excited as we were. It feels so good.
BTW, I'm Darlene Suba the owner and creator of Yeah! Pierogi LLC. Right now it is me and my son Patrick making all the pierogi and packaging them up. We rent space at a local bakery on the West Side of Buffalo which is where we make the pierogi. We don't have our own store front so we need Flea Markets and Farmer Markets to sell our product at. We are looking into shipping pierogi but right now we don't offer shipping.
My sister-in-law, Jenn Suba, designed all the logos. She's a great Graphic Design Artist with many years of experience. The rogi character was hand drawn by my BFF Carey then Jenn made it into a colorful graphic. It really captures who I am .... usually I'm smiling, happy, upbeat and colorful.
A few people have asked why I came out with a vegan line of Pierogi? I'll try not to be too long winded here. Get me to talk about pierogi or just food in general and I can go on and on and on.
Back in 2012, I was diagnosed with Pancreatitis. It was one of the most painful things I had to go through. That pain is comparable to child birth. I don't EVER want to go through that again. I couldn't eat much for months. Gave up all animal products cause my body wouldn't digest it. Gave up all processed foods. I pretty much drank green shakes with very little fruit for months. I then graduated to rice, sweet potatoes then eating whole veggies, etc. You get the picture. I believe eating a plant based diet cured me! It took several years of being careful of what I eat and to this day I still can't eat alot of animal products. So I stay away from most of it cause I remember that pain and don't want to go back to that. Food is medicine!
When I had the pancreatitis I couldn't eat any pierogi that was being sold at the restaurants. It was so difficult to eat out back then. Sometimes I couldn't even eat a salad at a restaurant especially if it was bagged my body didn't want it. It had to be fresh. I couldn't find a vegan pierogi anywhere. Everyone made them with eggs and sourcream. I already loved to cook and my oldest brother Chuck said to me one day, Why not make your own? The thought of making flour and rolling dough just didn't sound fun to me, lol. I do love pierogi though!!!
After a few years of research, talking to family, friends, researching internet sites in Poland, translating them into English I started coming up with my own recipes. I'm a diabetic so flour is not too healthy for me. Spikes my blood sugar, puts me in a funk for the day, etc. I stumbled upon a few sites where people incorporate vegtable puree into thier dough. Yes!! That is when I thought this might work for me. The fiber from the veggies might help my body process the flour and not spike my blood sugar (as much). I tried the spinach first cause I eat it all the time. Wow, what a difference it made. It still spiked but not as bad, I didn't feel bloated and tired.
In 2016, is when I really started thinking that I can do this as a business. Why not? Making that step is risky, it was a difficult decision. I had a good job at M&T Bank, I was there for 11 years as a Banking Officer. Why would I leave a steady income?
In 2017, my family and I lost someone very close and dear to us. My oldest brother Chuck Koeppel. We were all shocked, he was only 55 when he passed. Well six months later this hit me hard. Didn't even know what was wrong really till I started seeking counseling cause for me to be depressed, anxious and extremely moody was NOT normal for me. It spiraled out of control, had a panic attack at work and went out on disability. While I was on disability I used Pierogi making as my therapy at home at the request of my doctor. She asked me what I like to do I told her cook and make pierogi. She said use that at home for your therapy. So I did and OMG it was the best thing I could have ever did. I found myself all over again! I went back to work at M&T Bank and it wasn't for me anymore. I changed, my thought process was different so I quit my job to pursue PIEROGI!
Ok, it was long winded and hope I didn't bore you too much!
